Origin: Found almost everywhere in Italy but imported mostly from Umbria and Le Marche, Central Italy.
Fresh summer truffles (Tuber Aestivum) are imported by Italtouch bi-weekly, the season starts in late May to end of September. It is a very common truffle, found in many regions of Italy and in the lower part of France. It is excellent raw and cooked but it is not to be confused to his cousin the black winter truffle! Many truffle aficionados love this cheaper truffle for its mushroom musky and earthy flavor. It is great on any pasta dish on rice and over eggs!
Typically we ship Black Summer Truffles at around 30-100 grams per piece, although larger examples are used to fill orders of large quantities
The exterior of Black Summer Truffles ranges from a light to dark brown color. The outside always demonstrates clearly defined large wart-like bumps in a polygon form. Black Summer Truffles should be very hard to the touch with no suggestion of softness.
When sliced in half, Black Summer Truffles should demonstrate a clear white marbling on a pale cream to light brown background.
Aroma and Taste:
Black Summer Truffles have a delicate flavor and aroma, with hints of earthiness, hazelnuts, chocolate, and vanilla. The flavor develops quickly as the season progresses. These truffles are very underrated, by early August when fully mature, they are quite pungent with strong flavor.
Source: Around 90% of our Black Summer Truffles are hunted wild in and around Le Marche and Umbria, Central Italy.
Keeping: Black Summer Truffles have a long shelf life, and can keep well for around 2 weeks after being hunted.
